When we want to make a special appetizer to go with our cocktails there is one treat, besides pine nut hummus, that I always think of. Bacon wrapped dates are a classic but the thing that gets me interested in writing a post about them is how everyone in food blog and Internet food sites seems to ask you stuff the dates.
What I think is more important is choosing your bacon and pairing the wrapped dates with another small snack. In our case Marcona almonds from Trader Joe’s were the snack nut of choice. The bacon was the thick cut, apple smoked, uncured bacon also from TJ’s. Thick and full of flavor without nitrates that make bacon less good for you. Consider me a convert to the ways of uncured bacon.
The recipe is almost too simple to write down
5 or 6 slices thick cut uncured bacon
Twice as many pitted dates as slices of bacon
Pre-heat oven to 350 and cover a baking sheet with foil for easy clean up. Cut the bacon in half so you have two shorter strips and wrap each date in the bacon. If you have toothpicks knit the bacon together so it doesn’t fall apart. Bake for 25-30 minutes, at 15 minutes turn over the pieces with tongs so they get nice and browned on all sides. Serve with a small bowl of snack nuts like Marcona almonds.
(And as a bonus use the bacon fat that renders out for making roast potatoes)
